Cauliflower Vinegar Appetizers Spanish Sauces Low Fat

Title: Cauliflower with vinegar sauce

Yield: 4 Servings
1 ea Onion, chopped
2 ea Garlic cloves finely chopped
1 c Green bell pepper, chopped
1 1/2 ts Olive oil
3 1/2 c Cauliflower florets
3 tb Vegetable stock
3 tb White wine vinegar
2 ts Paprika
1 ts Cumin, ground
1/4 ts Salt
Saute the onion, garlic & bell pepper in oil for 3 minutes. They
should all be slightly softened. Add the rest of the ingredients,
cover & simmer until the cauliflower is tender, no longer than 10
minutes. Ser e immediately.
